Betfair exchange wants from me "full explanation as to how you are funding your account (e.g. Salary or other income) along with documentation that illustrates this (e.g. Wage Slip/ P60/ company/property ownership etc.). "  Do they have right to ask this, even after this GDPR thing?

Data Protection and AML policies are different things.

That is not related to GDPR, it has to do with Money Laundering protection laws. I think casinos still have to do these measures even with GDPR in place.
