Because live handicaps on Pinnacle (and on asian bookies in general) are referred to the rest of the match.
You have placed the bet when Mainz-Bayern 2-0.
Rest of the match score was 0-1 so the bet has correctly been refunded.
You would have won taking 1h1,5 live (on 2-0).

But a "Handicap" market is VERY different than "Asian handicap" market.
I know very well how a handicap market works and how an Asian handicap market works.The problem is that this market is titled as HANDICAP and NOT as ASIAN HANDICAP.

Final score (after your bet) and including your positive handicap: 1-1
It's a draw and you had 1.
Here are the two points of Pinnacle rules referring to your case:
GENERAL RULES 7) If a “Draw” price is offered in a Money Line market, and the draw happens, then bets on each team lose. If a draw is not offered and a draw happens, then bets on both teams are void.
SOCCER MARKET RULES 6) In-Play 2-Way (“Asian”) Handicaps: Bets are settled according to the score for the remainder of the period after the bet has been placed. Any scores prior to the bet being placed are ignored for resulting purposes.

Alealeale is right. You bet when it was 2-0, match ended 2-1, so Home +1 is void, as result after you bet is 0-1. We can't make it any easier than that.

You're confusing a lot of things here. This is a two-way Asian Handicap market.
