Hi probably stupid question but if I purchase lets say Maltese data SIM card but I am in different country. Does the phone seems like And behave like it is in Malta? Thank in advance

SIM cards / Internet DATA via SIM always use IP address from the country of origin. It does not matter where is you GEO-location. If you buy a SIM from a Norway operator, you will always have a Norwegian IP address.
Yes it does use the an operator from abroad when you visiting another country - but it does not change anything. It applies for pre-paid cards as well. But most EU countries have strict rules for acquiring / restricting SIM cards (ID, address etc.).

If the phone/website itself provides geo-location - I can't tell for sure - never used phone for betting.
